Tucked in the basement at 45 North Castle Street is Hibiki Japanese Bistro and Restaurant. Hibiki was inspired by our founder’s love and admiration of the ‘Izakaya’ culture where people meet for drinks and snacks or meals after work to de-stress, relax and generally have a good time. We’re passionate about replicating the same relaxing atmosphere and vibes that customers can enjoy right in the centre of Edinburgh.
